Could the models be blocked from direct sunlight for as much of the time as possible with a covering? Could they even be displayed in space with the only light being from a low/non UV source?

I think it is inevitable that the uncoated prints will yellow over time. A clear-coat will provide some UV protection. If you have any control over the display case, you could use a UV filtering acrylic for the case. This coupled with a clear-coat should help minimize the yellowing process.

Does anyone have an recent experience with yellowing over time of SLA resins. NOT painting some white parts is going to save an upcoming project. The parts are display only inside .25" acrylic case and we can clearcoat. I need them to last 3 years inside .. Any thoughts?
